When summer arrives and the city being flourishing, abundant fresh seasonal ingredients have inspired our chefs at Yuzhilan Shanghai to create summer-day delicacy.

新鲜的斑节虾进入最肥美的季节,凝冻成虾冻膏后散发着红色的通润;来自印度尼西亚的鲜活小青龙,等不及伴着各式辣椒起舞;在雨季催促下的新鲜鸡枞菌,佐以鲜美的黑毛猪肋排,怎一个鲜字了得!

Fresh and sweet, the popular Kurma prawn is in season now with its bright red color and elevated umami. Green lobster from Indonesia builds romantic chemistry between different Sichuan peppers. And stunningly, the fresh termite mushrooms in rainy season have made a perfect couple with iberico ribs.

上海玉芝兰自6月15日(周一)起推出臻选夏日菜单,以时令食材为灵感,主厨骆启龙将传统川菜以匠心思路幻化出曼妙演绎。

A brand new summer menu will be launched on 15th June in Yuzhilan Shanghai. Inspired by seasonal ingredients, chef Luo Qilong has turned traditional Sichuan cuisine into a creative tasty journey.

鲜鸡枞菌排骨

Ribs with Fresh Termite Mushrooms

鸡枞菌素有“比肉还好吃的菌子”之美誉,经历过雨季的洗礼,愈发鲜甜,佐以黑毛猪肋排,加老母鸡汤一起熬煮, 排骨的香糯呼之欲出。

Renowned as more savory than meat, the fresh termite mushrooms become milder and sweeter during the rainy season. Accompanied by iberico ribs and stewed hen soup, the dish preserves the tastes of both fine texture and umami palate.

鱼香茄子

Fish Fragrant Sautéed with Spicy Garlic Sauce

主厨骆启龙将自制泡辣椒、葱姜蒜、糖和醋一起制成香酱汁,再将裹着黑毛猪肉末的茄子煎至外酥里嫩,浇上鱼香茄子的灵魂酱汁,足以唤醒味蕾。

 

Chef Luo combined pickled peppers, scalion, ginger, garlic with sugar and vinegar together to create a special sauce. Pan fried the eggplant filled with minced meat until it becomes crisp on the outside and tender on the inside. Then dressed with the spicy garlic sauce to bring out the delicacy.
