2021年3月16日,中国广东佛山 – 「亚洲50最佳餐厅」致力支持餐饮业的复苏,于2021年的年度榜单以外新增设了「亚洲之粹」(Essence of Asia)餐厅名单,以表彰业内的无名英雄。涵盖了在20个国家及地区内49个城市里的多个餐馆,从巴基斯坦到日本等多个地区。在今日(3.16)发布的名单上,中国大陆仅有六家餐厅上榜,佛山壹零贰小馆荣登其中。作为在国际上获得如此有分量荣誉的中餐厅,实属不易。

16 March 2021, Foshan, Guangdong, China – Dedicated to supporting the recovery of the restaurant scene following a year of extraordinary challenges, Asia’s 50 Best Restaurants 2021 introduces the all-new Essence of Asia, which is an initiative to recognise an unranked collection of local-hero restaurants from across the continent. The collection comprises establishments in 49 cities across 20 countries and territories, stretching from Pakistan across to Japan. The list, which has just been released today, features Foshan 102 House amongst six Chinese restaurants. It is rare to achieve such a prestigious international honor for a Chinese restaurant.

壹零贰 复兴粤菜古法技艺

2006年,壹零贰小馆由徐泾业(Xu Jingye)和姚敏(Yao Min)在佛山禅城区一处小巷内的民宅开立创立。餐厅名字源自于当时的门牌号码。在十多年前,以当时极少见的私房菜概念,提供食客预约制固定菜单,开业不久便受到许多瞩目。主厨徐泾业是地道的佛山人,师从粤菜泰斗陈大本先生,最初餐厅以供应新派改良粤菜为主,然而在开业一年之后,这位青年主厨几经沉淀思量,决定重新调整菜式方向,在融合菜风日渐风行之际,选择了一条截然不同的道路—回归传统古法粤菜,悉心钻研粤菜的根基。2009年,餐厅搬迁到靠近三村小区的两层平房中,一天最多仅接纳三桌客人。

Tucked in an alleyway in the Chancheng district of Foshan, 102 House was founded in 2006 by Xu Jingye and Yao Min with its name coming from the door number of the private house the restaurant sat in. Since very first beginning, 102 House has been providing a fixed menu on a reservation basis, a concept bold enough at that time to attract flocks of diners soon after its opening. Chef Xu Jingye is a Foshan aboriginal and received rigorous training under Mr. Chen Daben, who is widely acclaimed as the master of Cantonese cuisine. 102 House initially featured modern Cantonese dishes, but one year later, Xu decided to return to the style old-school and focus on fundamentals of traditional Cantonese cuisine, despite the rolling bandwagon of fusion cuisine. In 2009, the restaurant was relocated to a two-story bungalow near the Sancun district, where it only accommodated a maximum of three tables a day.

顺应四季流转的本地季节之味

几年过后,徐主厨走访日本餐厅从中吸取灵感,受到日本最具季节特色的怀石料理启发,将其精神运用到粤菜四季食材和调味运用的特色中,再结合自身料理思维,打造出有别于传统,以“突出食材本味”为灵魂的一套菜单。

A few years later, inspired by Japan’s elaborate seasonal kaiseki cuisine, Chef Xu instilled its spirit into his way of translating Cantonese cuisine with seasonal produce and seasoning. The result is a set of menu that breaks away from conventional thinking, and one that harnesses the original flavour of the ingredients.

壹零贰小馆的菜单共有二个价位选择,晚餐前,徐师傅亲自为客人提供他精选的茶,从经过特别编排的茶饮仪式开场,接着陆续呈现十道菜式,从前菜、主菜、主食到甜品皆具。菜单后半段的鸡和鱼是固定的,前半段的菜品则根据季节食材来设计。餐具皆是主厨亲自收藏的古董餐具。

The menu comes at two budgets. Before dinner is served, Chef Xu would serve guests with his choice of tea in a specially practiced formal tea ceremony experience, which is followed by a ten-dish meal served at a prescribed order from starters, main courses, staples to desserts. The latter half of the menu features a fixed selection of chicken and fish, while the first half centers around seasonal ingredients. What’s more, it’s just hard not to mention that all tableware at 102 House is from Xu’s own vintage collection.

备受瞩目的新生代中餐之光

2018年初,壹零贰小馆和香港粤菜馆大班楼合作四手晚宴,受到热烈回响。2019年5月,再度和当年名列亚洲五十第41位的大班楼和第11名的东京名店DEN做了一场六手联弹晚宴,两天共40多个席位,甫推出席位便全数售罄,壹零贰小馆更加打开在亚洲的知名度。

In early 2018, 102 House joined a well-received four hands dinner with Hong Kong’s Cantonese restaurant The Chairman. A year later, it again partnered with Tai Pan Lo (ranked 41st in Asia’s 50 Best Restaurants) and Tokyo’s DEN Restaurant (ranked 11th) for a six hands dinner, with over 40 seats sold out in just two days.

同一年,壹零贰小馆荣获「2019全球最佳100中餐厅」颁发十佳餐厅殊荣,徐泾业主厨获颁2019年度最佳厨师。去年徐师傅更受中法大学邀请,代表粤菜出席「神奇的筷子」里昂美食节,可谓是名扬国际的中菜之光。

In the same year, 102 House secured Top 10 Restaurants under the World’s 100 Best Chinese Restaurants 2019 with Chef Xu awarded Chef of the Year. Last year, Chef Xu was invited by the Institut Franco-Chinois de Lyon to represent Cantonese cuisine at the ‘Les Baguettes Magiques’ Food Festival in Lyon.

大班楼主理人叶一南对壹零贰小馆评价道:“他们做的菜有古风,其中一些更是逐渐失落的传承。材料不易找,工夫又多,看似简单,其实花尽心思,大巧若拙。因为是这样,才有一种古朴纯净的味道。真正广府菜,巧手暖心。”

Danny Yip, the co-founder of The Chairman, commented on 102 House: “Their dishes are old-fashioned, so old that some are even near the brink of loss. The ingredients they use do not come easily, and there is work and effort in their dishes. Simple as it may look, but in fact it is rather the opposite. The pristine and authentic Cantonese taste can best define the restaurant’s cuisine, masterfully crafted and soothes your heart.”

With the fame spreading quickly in the gourmets’ circle, 102 House expects to indulge diners with its heritage spirits and innovative vibes of Cantonese cuisine with its new venue in Shanghai this year.

「亚洲之粹」旨在赞扬能代表亚洲餐饮文化的餐厅。这不设排名的餐厅名单,让大众聚焦在那些即使在近期又或持续面对着危机,却仍为其所在社区和当地餐饮文化带来正面影响的餐厅。这些餐厅在亚洲的餐饮体系中不可或缺,他们保留了传统的烹饪技艺,推崇地道的风味,并担当与社区建立联系的重要角色。

Essence of Asia aims to celebrate restaurants that are representative of Asian gastronomy. This unranked list spotlights restaurants that, despite recent or ongoing crises, have made a positive impact on their communities and local cuisine. These restaurants are integral to Asian’s culinary ecosystem that preserve traditions, honour authentic flavours, and build vital connections with their communities.
