Lying next to northeastern of China, the Yellow Sea is one of the world’s largest treasure troves of marine life. Its semi-enclosed body of water provides for ideal fishing grounds that nurish a plethora of seafood produce widely loved for its rich collagen contentand firm texture. Each year from May to June when the season transitions from spring to summer, a variety of seafood products are ready to shine at their best. Fengtian Restaurant offers a selection of must-try seafood in season – Donggang Swimming Crabs, Green Willow Clams, Mantis Shrimps, Dalian Sea Cucumbers and Dalian Abalone. Situated on the coast of the Yellow Sea at the mouth of the Yalu River, Donggang is a port city in the southeastern tip of the Liaodong Peninsula and is located near the maritime border with North Korea. Taking advantage of this unique location, the saltwater environment is blended with freshwater from the Yalu River, giving the waters a rich collection of nutritious seafood produce.

其中最知名的海鲜之一便是东港飞蟹,也称梭子蟹,是丹东东港的特产,生活在深水中,体型硕大、肉质鲜美,一直是蟹类中的上品,每进入九月,东港飞蟹时常成为丹东人家里饭桌上的佳肴,蒸煮,或是生腌,最能体现飞蟹的鲜美。

The Swimming Crabs is a species of the Portunid family, which is a widely sought-after speciality of Donggang, Dandong City, Liaoning Province. Its large size and quality meat provide a good illustration of deep-water adaptation. In September, swimming crabs are massively consumed by Dandong locals. Steaming and raw marinating can best show off its umami flavours and freshness.

大黄蚬既是黄海专属,也是丹东特产,每年四月至六月最为肥美。因为肉肥味鲜,在丹东最常见的吃法是一家人上一大锅蚬子汤,吃不完的汤会留下来,为其他菜肴提鲜,而吃不完的大黄蚬,丹东人会把肉拨下来,成为炒料,在丹东市区也可以在路边摊贩品尝烤大黄蚬。

Green Willow Clams are exclusive to the coastal waters of the Yellow Sea and as peciality of Dandong. From April to June, Green Willow Clams full of natural umami would be made into a family-size pot of clam soup. Locals would keep the unfinished soup to lay down a base for another flavorful dish, while the uneaten meat is plucked out of the shell to be used as stir-fry ingredients. Drizzling, fresh roasted Green Willow Clams can be found in packed food stands along the buzzing town streets of Dandong.

大连海参也是东北海鲜珍宝之一。海参又名海鼠、海黄瓜,是久负盛名的海味八珍之一,与燕窝、鲍鱼、鱼翅齐名。海参种类很多,其中又以刺参为参中珍品,大连海参即为刺参,产自大连渤海湾冷水域,特色是野生、肉厚、慢生长、多刺、坚硬、韧性好。大连海参的夏眠特性造就品质的关键,主要原因是水温高低落差大,一旦水温高于 20℃,海参就会进入夏眠,一睡就是三四个月,常年的冰冷海水加上夏眠,使得海参生长周期长,品质也较好。

Dalian Sea Cucumberis one of the seafood treasures of Northeast China as well. Also known as ‘Sea Mouse’, sea cucumber is long-hailed as one of the eight treasures of seafood, with reputation broadly acknowlegded as the ranks of bird’s nest, abalone and shark’s fin. A number of species of sea cucumber are highly prized; spiky cucumber is one. Capitalizing on the wild, cold waters of the Bohai Bay, Dalian Spiky Sea Cucumbers tend to have more larger, fleshy, cone-shaped projections on their bodies, a soft, thick body wall, firm and bouncy meat and longer maturation period.One key for forming the suprior quality of Dalian Sea Cucumber is its habit of summer hibernation and water temperature variation. Once water temperature rises above 20°C, sea cucumbers enter aestivation which usually lasts three to four months. This has helped extend its growth period and thus better product quality.

大连海参营养价值因而比普通海参营养高很多,特殊的大陆架结构和寒暑交界地带的位置,使得海底有南北、冷暖水流交汇,具有很好的海水交换能力和自净能力,海洋生物营养物质更新频繁也更丰富。

One important reason for higher nutrient content of Dalian Sea Cucumber is this: its underlying seafloor structure and a unique junction of different climate zones, contributing to the frequent exchange of cold currents from the north and warm currents from the south. This has allowed the coastal waters to be frequently refreshed with various organisms and nutrients to nurture an abundance of marine life.

Dalian Sea Cucumberis

中国的海参按照产地大致可分为三类,大连参、山东参、南方参,大连纯野生海参是行业内公认最好的海参。大连市已把大连海参向国家质检总局申请大连海参地理标志产品,划定区域的海参才能称为辽参。

Chinese sea cucumbers can be roughly divided into three categories according to their places of origin, namely Dalian Sea Cucumbers, Shandong Sea Cucumbers and Southern Sea Cucumbers, with wild Dalian Sea Cucumbers being the most recognized among the industry. The city of Dalian has submitted the application of national geographical identification of Dalian Sea Cucumber to the State General Administration of Quality Supervision, Inspection and Quarantine, because only sea cucumbers harvested from Liaoning Province can be certified as Liaoning Sea Cucumber.

The cold waters of China’s northernmost ice-free port city Dalian is home to one of the country’s best abalones, diskabalone, which is hailed as the “crown of seafood” for its premium quality. This kind of abalone is generally found on rocky reefs near clean waters with rich marine life, thus giving it firm, plump meat, high nutritional values, as well as a widely acknowledged reputation of “soft gold” of the ocean.
