The Hut was founded by Mr. Zhu Jun in 2015, focusing on New Huaiyang Cuisine. A traditional touch without losing fashion, simple without losing refinement. A perfect interpretation of inheritance and innovation, it agrees with fine dining concepts while revitalizing ancient culinary treasures with a modern touch of urbanity and elegance. The Hut owns four stores in Shanghai: NOBLE Grand Gateway 66, The Place, Kerry Parkside and Bauhinia Square. Everything in The Hut is centered on people, with a fine selection of wines and dishes and a relaxed, elegant environment. By blending traditional dishes with fashionable flair, The Hut builds a delicate lifestyle while offering a state-banquet level yet affordable version of the Huaiyang cuisine, where diners can savour unique flavours and experience outstanding services.

Huaiyang cuisine, or literati cuisine, is one of the four major cuisines of China that first emerged in the Spring and Autumn Period, developed in the Sui and Tang Dynasties, and flourished in the Ming and Qing Dynasties. Reputed as the best taste in southeast China and the most beautiful cuisine in the world, Huaiyang cuisine is the absolute protagonist in state banquets for its distinctive traits such as ‘catering both north and south palates, moderately sweet and savory, good at braising and full of nutrition’. The Hut mindfully interprets its simplicity and elegance, taking on various classic delicacies inHuaiyang cuisine through modern cooking techniques, and highlighting the charm of Kung Fu cuisine by instilling urbanity into ancient flavors at the tip of your tongue.

Mr. Zhu Jun with International Culinary Panel of Singapore Airlines

食庐餐厅的创始人和董事长朱俊先生深耕餐饮行业近30年,曾经带领专业团队拿下国内中餐首颗米其林星星,并倾情打造三家米其林餐厅,连续摘星多年。同时也是新加坡航空公司国际烹饪顾问团唯一华人顾问和非物质文化遗产专家委员会委员。基于对餐饮的热爱和打造大众化优质餐厅的理想,他在2015年创立“食庐”餐饮品牌作为传达自身餐饮思维的窗口,以此和大众分享他对于食材的理解和态度,并且用平易近人的消费价格,体验高品质食材和优质服务。

Founder and proprietor of The Hut, Mr. Zhu Jun has over 30 years of experience in the F&B industry. Before establishing The Hut, he carried his professional team to won the honor of the first Michelin starred Chinese restaurant in China and created three restaurants picking Michelin stars for many consecutive years. He is also the only Chinese consultant in the International Culinary Panel of Singapore Airlines and a member of the Expert Committee of National Intangible Cultural Heritage. In 2015, he founded his own restaurant, The Hut, in the hope to fill the unmet gap of affordable fine dining in the marketplace. Zhu Jun hopes that The Hut can be a window to express his works, to convey his understanding and attitude towards what we have in the plates, and to offer quality ingredients and services that won’t cost an arm and a leg.
